THREE- INGREDIENT PANCAKES

I am by no means an expert in the kitchen, however I do enjoy cooking and baking my own meals at home. I love experimenting and following NO RULES in the kitchen. I mainly eat vegetarian and plant-based meals and I am happy to share some of my favorite recipes with you all.

It was a beautiful summer day and I had a friend visiting me from New Zealand. I wanted to prepare a special “welcome breakfast” for her. We were both craving pancakes that morning. I realized I didn’t have flour or any pancake mix, so decided it was time to experiment with what I already had in the pantry.

I hadn’t made pancakes from scratch in a long time so I looked up a few recipes on the internet, and came across one that seemed very easy to follow. I decided to use OAT flour instead of all-purpose flour, which I found out is better for your health anyway. Oat flour is higher in fiber, protein, vitamins and minerals such as iron, magnesium, and zinc.

My friend fell in love with these pancakes and asked me to make them for her a couple more times during her stay. This is now the recipe I follow whenever I am in the mood for something sweet & quick to make for breakfast.

Say no more, I will share how to prepare this easy & delicious recipe:

INGREDIENTS: (servings: 4 people)

  1. 2 CUPS OF OAT FLOUR (or any flour you prefer)

  2. 1 RIPE BANANA

  3. 1 CUP PLANT-BASED MILK OF CHOICE

  • Blend some rolled oats in a food processor.

  • Smash the banana in a separate bowl.

  • Mix in the oat flour.

  • Add some plant-based milk for consistency.

  • Mix all 3 ingredients (you can add cinnamon, vanilla, chia seeds, or whatever extra ingredients you like on your pancake mix).

  • On a warm skillet, melt a little vegan butter or cooking oil spray of choice, then pour about a 1/4 cup of batter (depending on what size you prefer your pancakes to be).

  • Allow for each side to cook well, until golden (about 3-4 minutes).

  • Serve with fresh fruit, coconut milk-based yogurt, almond butter, syrup, or whatever toppings you love.
